Real Jelly

Before the days of packet crystals, real gelatin was obtained by

gently boiling grass fed bones

(Learn more on how to make bone both and gelatin yourself from our friends from  Seed 2 Soul)

If you don’t have time to make the gelatin from scratch the great news is you

can now purchase beef gelatin in a powdered form for convenience by a

brand called Great Lakes. This product is natural and grass-fed, derived from

the selective hydrolysis of collagen from bovine skin, connective tissue

and/or bones. (The way jelly crystals should come).

Spoon the herbal tea into your tea pot, add 300mls of boiling water and

leave to steep for 7-10 minutes.

While flavours are infusing, pour 100mls of hot water into a measuring jug

start stirring creating a whirl- pool then slowly add gelatin powder to the

whirl- pool continuing to stir until gelatin is completely dissolved.

*If hard globules form, just scoop them out for a smooth consistency – the whirl -pool should ensure less of a chance of this happening.

Stir in the gelatin liquid into the tea and pour into one large bowl or your

chosen portion cups.

Allow to cool then place into the fridge to set.

We personally stew berries in 150ml coconut water and half purified water.

Or you can use just purified water to poach your nominated fruit. Freshly

made fruit juice also works well  :)
